Strawberry matcha latte is a signature drink at Boba Guys, my most favorite bubble tea shop, and it’s clearly a favorite since I see so many people ordering it all the time. For a long time, I never ordered it because I was too attached to other drinks on the menu like Indian chai and their regular milk tea. Once I get hooked onto something I like, I have a hard time getting back out of my comfort zone.
But, I finally decided to order the latte one day and finally understood why it was such a favorite! I immediately fell in love with the combination of matcha sweetened with the flavor of strawberries. It was a beautiful flavor – the strawberries cut through the bitterness of the matcha, introducing a bright fruity flavor that makes it a lovely match in heaven.
I’m really happy with how this came out. This is not as sweet as the original version, so feel free to taste the puree and add more sugar if you like it sweeter.
Iced Strawberry Matcha Latte
Makes 1 serving
Inspired by Boba Guys
Ingredients
Strawberry Puree*
1 cup fresh strawberries, cut in halves
1/4 cup + 2 tbsp cane or white granulated sugar
1 tbsp lemon juice
Matcha
1½ tsp matcha powder
3 tbsp hot water, 175 F degrees
To Serve
1 cup oat milk, whole milk, or your choice of milk
Prepared boba, optional
Directions
- Make the strawberry puree. Combine the strawberries, sugar, and lemon juice in a high-speed blender and puree until smooth. Taste the puree. If it’s not as sweet to your liking, add 1 tbsp more sugar at a time and blend. The more sugar is added, the more it’ll “stay” at the bottom of the glass when you layer your milk and matcha on top. Transfer the puree to a container.
- Start assembling the drink. Add half of the strawberry puree into a tall glass. Layer in boba if using, then add enough ice to fill halfway through the glass. Fill with up to 1 cup of your choice of milk, leaving room for the matcha.
- Prepare the matcha. Add the matcha and the hot water to a small jar with a lid. Secure the lid and shake vigorously until the matcha powder has dissolved into the water. Slowly pour the matcha into the glass to achieve the “layering” effect. Alternatively, if you have a matcha whisk and matcha bowl, feel free to use them or a regular whisk and bowl if you do not have a small jar. Enjoy!
*You will have leftover strawberry puree. Use it to make another latte or top pancakes or ice cream with it!
